Spicy and Sweet Bars
Life is busy, it’s the American way. We eat in our car, standing up, walking down the street, but rarely sitting down, at a table, enjoying the food. While I’m personally a fan of the later, I also eat on the run. But instead of grabbing some garbage from the Sev down the street, eating a glorified candy bar or spending way too much on a Lara bar or Kind bar, I created my own instead.
Elana’s Spicy Power Bars inspired this recipe.
What you will need:
measuring cup
food processor
8×8 baking dish
Ingredients:
1 cup macadamia nuts
1 cup cashews
1 cup dates
1 cup dried apricots
1 tbs coconut oil
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1 teaspoon allspice
1 teaspoon vanilla extract
Method:
Blend dates, apricots, and coconut oil in your food processor for about 15 seconds. Add everything else and blend until dough starts to form little balls or stand up against the walls of the food processor. Press into an 8×8 baking dish and place in the fridge for at least an hour to allow the bars to set. Voila! Healthy, tasty, and satisfying bars.
