You do what with your pumpkin???

This is a few days late, but my roommate and I made a Halloween feast, where we actually ate the pumpkin, and it was delicious! (the leftovers still are!)

What you’ll need:

1 large onion, diced

3 garlic gloves, diced

1 can diced tomatoes

1 package ground beef

3 carrots, chopped

Lentils (we used the pre-cooked, vacuum sealed ones from Trader Joe’s)

1 zucchini, chopped

mixed spice mix, we used one that was a “Monterrey” spice mix, just think good steak rub, not Italian

1 Pumpkin

Put diced onions and garlic in a large pot until onions turn translucent, then add tomatoes and ground beef. Brown the beef on a medium high temperature, then allow the pot to simmer and stick the lid on. After 15 minutes, add all the veggies and the mixed spice seasoning and let the pot go back to simmering (remember: this is Pip style cooking, throw everything in the pot and call it good).

While the pot is simmering away, pre-heat the oven to 350, clean out the pumpkin, and separate the seeds from the gooeyness; just like you would in any pre-carving session! When the pumpkin is all cleaned out, fill it with the beef and veggie mix on the stove, pop it in the oven and allow to cook for one hour, or until the pumpkin is tender on the inside. Voila, delicious Halloween dinner!

We also toasted the pumpkin seeds and were thinking about making pumpkin-spice cookies, but that was before we burnt the seeds getting our costumes ready and decided that extensive cooking/costuming is perhaps not the best idea….
